Maintaining a healthy diet doesn’t mean that food has to be unpleasant. In fact, with the right attitude and a little research, you may find that eating naturally comes, well, naturally. With the help of this great recipe for quinoa salad, you can put your body and mind in a better place.
To make this salad you will first need some prime ingredients. Start with a teaspoon of olive oil, ½ cup of chopped white onions, 1 cup quinoa, 2 cups water, ½ teaspoons of kosher salt, 1 cup of fresh orange slices, ¼ cup chopped and toasted pecans, 2 tablespoons of minced red onion, 5 dates chipped, ½ pound of sliced asparagus pre-steamed and chilled, and finally, ½ jalapeno pepper well diced.
Once these ingredients are assembled, heat your teaspoon of olive oil up in a skillet using high heat. When the pan is nice and hot, sauté the onions until it is brown. Next, add your uncooked quinoa to the pan, sautéing for an additional 5 minutes. After that, add the two cups of water and the salt. Once this is boiling, cover the pan and reduce the heat to a simmer. Once all of the water is absorbed, transfer this mixture to a bowl and add the orange along with the rest of your garnishing ingredients. Top with your favorite dressing and you have a light and healthy food that is great for the body.
